  1. Sorry I can't reply in German, Google translate will have trouble with this. When a fixture isn't being controlled by something it will assume default values. Default for LED colours is usually white. Usually these are set in the profile as the "Home" value. If you bring up a playback that sets a colour on a fixture that isn't currently being controlled by something else it will start at the default then the fade will be from that to the playback colour and this may be what you are seeing. You could change the profile but its likely that when an official profile becomes available it will also default to white. Easier is to change the default. To do this, select your fixtures, set all the colour parameters to zero then update Home. It should offer you some options, select Default. See manual here.

  2. What is the exact model of desk you have? Frog, Fat Frog, Leap Frog, Bull Frog, Mambo Frog? It's written on the front. This is the manual for all except the Mambo Frog which has its own manual as it's a busking desk rather than a stack desk like the others. https://www.vari-lite.com/b-dam/vari-lite/discontinued-products/frog-range/english/frog-range-manual.pdf Latest software is FrogOS 10.12 and you will need these release notes for the changes since the manual only covers up to FrogOS 9.0. These Release Notes are very useful (and readable). A lot of useful features were added in the 10.x versions, so worth upgrading the console if you're behind. https://www.vari-lite.com/b-dam/vari-lite/discontinued-products/frog-range/english/frog-range-software-release-notes-10-12.pdf
